HOW TO MODIFY THIS RECIPE
Are you missing an ingredient or two but dying to try our delicious chicken recipe? Don't worry! Here are a few easy modifications you can try:
- Graham Cracker Substitute – No graham crackers? No problem! You can also use Ritz crackers, cereal, or even bread crumbs. If you want the sweetness of graham crackers, then add just a little brown sugar, and you'll be on your way to making your taste buds do a happy dance.
- Chicken Breast Substitute – We used boneless, skinless chicken breasts because we had a ton in the fridge, but thighs are A-okay, too.
- Corn Substitute – If you're out of corn, don't sweat it. Leave it out, or sub in another veggie. A can of green beans would work!
- Potato Substitute – Use up any kind of potato you have, or mix and match. You could even try sweet potatoes. The flavors mesh well with the sweetness from the graham crackers!
If your spice rack is looking bare, use what you have. Packets of dry salad dressing mix work great in a pinch! The moral of the story? You can use whatever you have in the fridge and pantry to whip up this recipe, so just step away from the car keys. Now, are you ready to get to this EASY and mouthwatering recipe?!

Servings 4
Ingredients
- 8 Tbsp butter, divided
- 3-4 cups potatoes, very thinly sliced
- 1 can corn, drained (or 16-oz frozen corn)
- 1-1 ½ cups honey graham crackers, crushed
- 3-4 large skinless chicken breasts, cut into strips
- 2 tsp basil, separated
- 2 tsp salt, separated
- 2 tsp pepper, separated
- 1 tsp rosemary
Instructions
Preheat the oven to 375°F. Put 4 Tbsp butter in a 9×13 pan and place in the oven as it's preheating. (Don't let the butter burn!) Pour the melted butter into a separate bowl or dish.
Meanwhile, slice the potatoes. Line the bottom of the pan with potatoes and top with corn. Add 1 tsp each of basil, salt, and pepper.
Combine graham cracker crumbs with 1 tsp each of basil, salt, and rosemary.
Dip chicken into 4 Tbsp melted butter, then coat completely in the crumb mixture. Place on top of the potatoes and corn. Sprinkle remaining crumb mixture on top!
Cover and bake for 30 minutes (depending on how large your chicken tenders are). Uncover and bake another 10 minutes or until the chicken reaches an internal temperature of 165°F and the potatoes are tender.
Serve with your favorite sides and tell all your friends how awesome you are.
Notes
If you don't have graham crackers, crush some Ritz crackers and stir in a teaspoon of brown sugar for a little sweetness!

This does indeed sound delicious. I’m really disappointed that we can’t get graham crackers here in Australia; my family would probably love this. (If anyone in Australia is reading this and knows of an alternative to graham crackers please let me know)

NO WAY! I’m so sad about that! You could use Ritz crackers. Or any other crackers for that matter. Maybe mix a little honey in the breading? The graham is slightly sweet and added to the salty is mmmm mmm good. I’ll bring you graham crackers if I ever come to visit!

Try arnotts Marie biscuits, or arrowroot. Some people say digestive biscuits are also a good sub also. I am from Australia but now live in the US. I think you would have to add a little sugar them though! ?

Looks so good! Going to make it this weekend! Did you know you can cook corn on the cob in the microwave and it tastes just like you boiled it?! Wrap each cob in a damp paper towel and cook for 2 minutes per cob. Great time saver!

You can cook corn on the cob in the husk for 3 minutes in the microwave. When done cut the stem end at kernels and pull the hairs and husk all off as one!

Just tried this for dinner tonight. It was amazingly delicious! I wasn’t sure how the graham crackers were going to work out, but they make it so good. Thanks for sharing!

Hey Jordan! I tried this recipe tonight (smelled so good!) but my potatoes took fo-ev-ah to cook. It started drying out the chicken and I finally had to take all the chicken pieces (cut up small like you did) and put the potato mixture back in for a third time. I drained my corn…is that why the potatoes didn’t cook? Help!

Oh no! I’ve never had that problem before. Did you slice them SUPER thin? Like as thin as poker chips? That’s how I do it and it never seems to be a problem. Maybe bake them without everything on them first for a few minutes then add the chicken if it continues to be a problem!

Thanks girl! Yeah, I sliced them really thin, like for au gratin potatoes. So weird. I’ll maybe cook them separately for a bit next time and see how they do.
Thanks!
P.S. It was really yummy!Reply

I made this tonight and it was good, but I felt a whole tsp of pepper was a bit overpowering on the potatoes, I would do half or less next time for sure! Otherwise tasty, thanks!

This recipe was so yummy but I am having a hard time getting the breading to stay and crisp. Any thoughts on a certain pan or suggestions?
